1. Creamy Spinach and Mushroom One-Pot Pasta

Ingredients:

  1. 8 ounces of fettuccine pasta
  2. 1 pound of chicken breast, thinly sliced
  3. 1 onion, finely chopped
  4. 2 cloves of garlic, minced
  5. 8 ounces of mushrooms, sliced
  6. 2 cups of fresh spinach
  7. 2 cups of chicken broth
  8. 1 cup of heavy cream
  9. 1 cup of grated Parmesan cheese
  10. Salt and pepper to taste
  11. Fresh parsley for garnish

Instructions:

  1. In a large pot, cook the sliced chicken until browned. Remove the chicken and set it aside.
  2. In the same pot, sauté the onion and garlic until softened. Add the sliced mushrooms and cook until they release their moisture.
  3. Add the fettuccine pasta, chicken broth, and heavy cream to the pot. Bring to a boil, then reduce the heat to simmer and cover.
  4. Once the pasta is almost cooked, stir in the cooked chicken, fresh spinach, and Parmesan cheese. Continue simmering until the spinach wilts and the pasta is fully cooked.
  5. Season with salt and pepper to taste. Garnish with fresh parsley before serving.

2. Lemon Garlic Shrimp One-Pot Pasta

Ingredients:

  1. 8 ounces of linguine pasta
  2. 1 pound of large shrimp, peeled and deveined
  3. 3 tablespoons of olive oil
  4. 4 cloves of garlic, minced
  5. 1 teaspoon of red pepper flakes (optional for heat)
  6. Zest of one lemon
  7. Juice of one lemon
  8. 2 cups of cherry tomatoes, halved
  9. 3 cups of chicken broth
  10. Salt and pepper to taste
  11. Fresh basil for garnish

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add minced garlic and red pepper flakes (if using) and sauté until fragrant.
  2. Add the shrimp to the pot and cook until they turn pink. Remove the shrimp and set them aside.
  3. In the same pot, add linguine, chicken broth, lemon zest, and lemon juice. Bring to a boil, then reduce heat to simmer and cover.
  4. When the pasta is almost cooked, stir in the halved cherry tomatoes and cooked shrimp. Continue simmering until the pasta is fully cooked.
  5. Season with salt and pepper to taste. Garnish with fresh basil before serving.

3. Vegetarian Mediterranean One-Pot Pasta

Ingredients:

  1. 8 ounces of penne pasta
  2. 1 can (15 ounces) of chickpeas, drained and rinsed
  3. 1 pint of cherry tomatoes, halved
  4. 1 medium-sized eggplant, diced
  5. 1 red bell pepper, thinly sliced
  6. 1 small red onion, thinly sliced
  7. 3 cloves of garlic, minced
  8. 2 tablespoons of olive oil
  9. 1 teaspoon of dried oregano
  10. 1 teaspoon of dried basil
  11. 1/2 teaspoon of red pepper flakes (optional for heat)
  12. 2 cups of vegetable broth
  13. Salt and pepper to taste
  14. Feta cheese for garnish
  15. Fresh parsley for garnish

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add minced garlic, sliced red onion, and red pepper flakes (if using). Sauté until the onion is softened.
  2. Add diced eggplant to the pot and cook until it begins to brown.
  3. Stir in halved cherry tomatoes, sliced red bell pepper, chickpeas, dried oregano, and dried basil. Cook for a few minutes until the vegetables start to soften.
  4. Add the penne pasta and vegetable broth to the pot. Bring to a boil, then reduce heat to simmer and cover.
  5. Allow the pasta to cook until al dente, stirring occasionally to ensure even cooking.
  6. Season with salt and pepper to taste. If you like, drizzle a bit more olive oil for added richness.
  7. Once the pasta is cooked, garnish with crumbled feta cheese and fresh parsley before serving.
